This one is REALLY easy if you have home made pesto already home made.   Of course, home made pesto is ideal, but I’ve been known to buy a few Sunflower Kitchen kale and oregano pestos to throw on my brown rice pasta or toast.  In fact, for this particular snack, I used Fontaine Sante’s beet hummus cocktail.

This quick and easy rice cake pesto recipe was inspired by and slightly re-worked from this Food52 recipe.  It can also be enjoyed on toast, wraps, pastas, sandwiches, scrambled eggs…. anything you can think of!
