This is one of the easiest way to get more veggies in your diet- and cut back on the junk food that we tend to mindlessly consume while watching movies.
Simple. Simple. Simple.
Pick a movie to watch.
Set your oven to 400F.
Chop the head of cauliflower (the one that has been staring at you all week from the crisper) into popcorn like size pieces.
Toss it all with 2 – 3 tbsps. of olive oil.
Sprinkle with Sea salt and black pepper to taste.
Add 2 tbsps. of capers.
Spread the cauliflower and capers out on a roasting pan.
Roast in the oven for 20-30 minutes (or until desired tenderness).
